After finishing high school, Fabio followed his passion for sailing and spent ten years travelling on sailboats, never losing touch with his passion for food and wine. He earned his sommelier certification and pursued a degree in viticulture and oenology in 2000.
After two harvests in a winery in the Bolgheri region, Fabio settled in Montepulciano in 2003. Since then, he has crafted award-winning wines for one of the area’s most important and renowned wineries.

Inspired by the Tonini/Raspanti family’s legacy and Fabio’s vision to produce wines that honor the soul of the vineyard, Michael Oettli—a wine lover and friend of the family for over a decade—joined the journey. With twenty years of entrepreneurial experience in sales and marketing and having spent years immersed in the life of Montepulciano, Michael provided the commercial vision for the launch of Aiola Vecchia in 2024. Today, he serves as the estate’s global voice, sharing our story and our wines with the world.
